Sunday Brunch


  • 4 slices rye bread
  • 2 avocados
  • 1 tablespoon Ultimate Oil Blend
  • Handful of pumpkin seeds
  • 1 tomato, sliced
  • 1 boiled egg, sliced
  • Squeeze of lemon juice
  • Sea salt
  • Black pepper

Serves 2

Mash together the avocado, Ultimate Oil Blend, lemon, salt and pepper in a mixing bowl. Spoon the mixture evenly over the rye bread and top with egg, tomato and pumpkin seeds

Best served straight away as the mixture can discolour – the lemon juice helps prevent this, but serve immediately to keep this dish looking delicious
